An easy to prepare and delicious winter comfort food.
Most potatoes are suitable for baking, but Russets or Dutch creams are recommended if you can find them.
Set your oven to 200oC.
Wash potatoes and prick all over with a fork.
Don’t wrap potatoes in foil as this will make them steam while they are cooking – the most delicious potatoes have a crispy skin when cooked.
Brush the potatoes with oil and place in the oven on a tray for between 50 minutes to one hour, depending on size of the potatoes.
The fun part is the fillings
There are too many possibilities to make a comprehensive list, but here are a few cheesy ideas:
- Labneh and chopped parsley
- Fried onion and bacon topped with cheddar cheese
- Chopped feta and fresh chopped tomatoes
- Sautéed mushrooms topped with sour cream and chives
- Melted Camembert with cranberry relish
- Sweet corn, minced beef and cheddar cheese
- Olives, corn and sour cream.
