{"id":313,"date":"2022-05-26T02:06:17","date_gmt":"2022-05-26T02:06:17","guid":{"rendered":"https:\/\/kangaroovalley.nsw.au\/valleyvoice\/?p=313"},"modified":"2022-05-29T01:03:38","modified_gmt":"2022-05-29T01:03:38","slug":"cheese-n-mac-bites","status":"publish","type":"post","link":"https:\/\/kangaroovalley.nsw.au\/valleyvoice\/2022\/05\/26\/cheese-n-mac-bites\/","title":{"rendered":"Cheese \u2019n Mac Bites"},"content":{"rendered":"<p>No, not THAT Mac \u2026 this recipe calls for our old friend maca-roni.<\/p>\n<p><em>You will need:<\/em><\/p>\n<p>250g macaroni<\/p>\n<p>40g butter<\/p>\n<p>1\u00bc cups plain flour<\/p>\n<p>3 cups milk<\/p>\n<p>1 cup good quality vintage cheddar cheese, grated<\/p>\n<p>\u00bd cup parmesan, grated<\/p>\n<p>100g ham, chopped finely (optional)<\/p>\n<p>2 eggs<\/p>\n<p>2\u00bd cups panko breadcrumbs<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>Oil for frying.<\/p>\n<p><em>How to make it <\/em><\/p>\n<p>Tip: complete steps 1 to 8 the day before you want to enjoy these delicious bites.<\/p>\n<p>1. Cook macaroni until soft. Drain and set aside.<\/p>\n<p>2. Melt butter in a saucepan over medium heat.<\/p>\n<p>3. Add \u00bc cup plain flour and stir continuously until bubbling.<\/p>\n<p>4. Remove from heat and gradually blend&nbsp;in 2\u00bd cups milk.<\/p>\n<p>5. Over medium heat, stir until mixture thickens.<\/p>\n<p>6. Stir in cheddar and parmesan cheeses. Season to taste.<\/p>\n<p>7. Stir in macaroni and ham (if using).<\/p>\n<p>8. Pour mixture into a 20cm x 30cm greased tray. Cool for 30 minutes then chill for 4 hours or overnight until firm.<\/p>\n<p>9. Put 1 cup plain flour in a shallow bowl. In a second bowl place whisk together 2 eggs and \u00bd cup milk. Place panko breadcrumbs into a 3rd bowl.<\/p>\n<p>10. Turn macaroni mixture onto a work surface and cut into 24 cubes.<\/p>\n<p>11. Coat each cube in flour, then dip in egg mixture, then coat in panko breadcrumbs.<\/p>\n<p>12. Heat oil and shallow fry cubes for 2 minutes each side, or until golden.
