No, not THAT Mac … this recipe calls for our old friend maca-roni.
You will need:
250g macaroni
40g butter
1¼ cups plain flour
3 cups milk
1 cup good quality vintage cheddar cheese, grated
½ cup parmesan, grated
100g ham, chopped finely (optional)
2 eggs
2½ cups panko breadcrumbs
Salt and pepper to taste
Oil for frying.
How to make it
Tip: complete steps 1 to 8 the day before you want to enjoy these delicious bites.
1. Cook macaroni until soft. Drain and set aside.
2. Melt butter in a saucepan over medium heat.
3. Add ¼ cup plain flour and stir continuously until bubbling.
4. Remove from heat and gradually blend in 2½ cups milk.
5. Over medium heat, stir until mixture thickens.
6. Stir in cheddar and parmesan cheeses. Season to taste.
7. Stir in macaroni and ham (if using).
8. Pour mixture into a 20cm x 30cm greased tray. Cool for 30 minutes then chill for 4 hours or overnight until firm.
9. Put 1 cup plain flour in a shallow bowl. In a second bowl place whisk together 2 eggs and ½ cup milk. Place panko breadcrumbs into a 3rd bowl.
10. Turn macaroni mixture onto a work surface and cut into 24 cubes.
11. Coat each cube in flour, then dip in egg mixture, then coat in panko breadcrumbs.
12. Heat oil and shallow fry cubes for 2 minutes each side, or until golden. Drain on paper towel.
Serve with onion jam, a dip or as a light meal with a leafy green salad.
